We love Mediterranean salads like this one - they’re packed with healthy fats and require little to no cooking at all. You really get to taste the flavour of the veggies in their most natural state.

3 tomatoes, cut into wedges
2 continental cucumbers, deseeded and cut into 1cm semi circles*
1 red onion, sliced thinly
2 cups rocket leaves
1 cup olives, of your choice
150g hard feta, crumbled

1/4 cup olive oil
1/4 cup red wine vinegar
1 tsp dried oregano
Sea salt
Cracked pepper


  1. Combine all salad ingredients in a large mixing bowl.
  2. Combine all ingredients for the dressing in an airtight jar and shake to to mix.
  3. Pour dressing over salad. Serve as is or with BBQ meats, seafood or vegetarian protein source

Top Tip: To remove seeds, cut cucumber lengthways and run a teaspoon through the middle of the cucumber.
