We love Mediterranean salads like this one - they’re packed with healthy fats and require little to no cooking at all. You really get to taste the flavour of the veggies in their most natural state.
3 tomatoes, cut into wedges
2 continental cucumbers, deseeded and cut into 1cm semi circles*
1 red onion, sliced thinly
2 cups rocket leaves
1 cup olives, of your choice
150g hard feta, crumbled
1/4 cup olive oil
1/4 cup red wine vinegar
1 tsp dried oregano
- Combine all salad ingredients in a large mixing bowl.
- Combine all ingredients for the dressing in an airtight jar and shake to to mix.
- Pour dressing over salad. Serve as is or with BBQ meats, seafood or vegetarian protein source
Top Tip: To remove seeds, cut cucumber lengthways and run a teaspoon through the middle of the cucumber.
