Fudgey Cacao & Beetroot Superfood Brownie

Ingredients
- 1 cup nut butter
- 1 egg
- 1/2 cup rice malt syrup
- ¼ cup of raw cacao powder, plus extra for dusting
- 2 teaspoons baking powder
- 1 cup of grated beetroot (approx 1 medium beetroot)
- 80g 85% dark chocolate, roughly chopped
Method
- Preheat oven to 180°C. Grease and line a rectangular slice tin with baking paper.
- Combine all ingredients in a large bowl.
- Spoon mixture into a prepared tin. Bake for 35 minutes, or until a skewer inserted into the centre comes out clean.
- Dust with extra cacao.
