Cook time: 10 minutes

Ingredients

  • 2 carrots chopped
  • 1⁄2 onion chopped
  • 100g red split lentils
  • 1 stalk celery chopped
  • 1 clove crushed garlic
  • 1 bay leaf
  • 1 tsp dried oregano
  • 1 tsp fresh chives chopped
  • 500ml water

Method

1. Put all ingredients (except fresh chives) in a pan with the water.

2. Bring to boil and cook until tender.

3. Remove from heat and discard bay leaf.

4. Blend or mash until thick and creamy.

5. Serve with chives on top.
